Minty-mansi Granita

Minty-Mansi GranitaYOU know it’s summer when the cool climate is starting to give way to a warm breeze and your sweat keeps streaming down your face especially during noontime. It is thus time to beat the summer heat with cool, icy drinks such as this Minty-mansi Granita from The Maya Kitchen.

3 cups water
1 cup sugar
zest of 6 pcs. calamansi
1/2 cup calamansi juice
mint leaves, crushed (as needed for taste and garnish)

1. Combine 1/2 cup of water and 1 cup sugar in a medium-sized saucepan.
2. Add the calamansi zest and mint leaves to the saucepan.
3. Over medium heat, stir ingredients frequently until sugar is dissolved completely. Remove syrup from heat and strain into a bowl. Add the remaining water then chill.
4. Add calamansi juice to the cooled syrup then pour into a shallow pan. Put the pan in freezer for 30 minutes. Scrape the edges towards the center using a fork once they begin to freeze. Check every 30 minutes then repeat the process of scraping until the entire mixture is frozen but is broken down into fine crystals. Use individual dishes for serving.

*Note: Basil may be used instead of mint leaves.
