ILONGGO flavors take center stage at Marco Polo Ortigas Manila’s Cucina this August.
As part of its commitment to feature local flavors on a global level, the restaurant features the best of Ilonggo cuisine, including some of the province’s favorite dishes such as La Paz Batchoy, Valenciana, KBL (Kadyos, Baboy at Langka), and Laswang Utan (vegetable dish similar to dinengdeng and bulanglang).
From August 1 to 18, 2019, Kaon ‘Ta sa Cucina features Ilonggo dishes all over the daily lunch and dinner buffet spreads. Like other Philippine provinces, Iloilo’s gastronomic interpretations stem from the place’s unique geography. Since it has sprawling midlands all the way to picturesque beaches, Ilonggo cuisine boasts of Panay Island’s rich bounty of fresh ingredients. Seafood specialties expected to catch the attention of diners include the fresh and juicy talaba (oysters) and the seasonal diwal. The latter is a much sought-after shellfish also known as angel wing clams because its shape reminds you of angels’ wings. The diwal tastes best when prepared the way one wants it within hours of being caught from the sea.
