JOINING the Mexican community in the Philippines, Diamond Hotel Philippines celebrates Mexico’s National Day this September by staging a special Mexican food festival dubbed La Comida Mexicana. On a limited run from September 16 to 20, 2015, the food promotion takes place at the hotel’s all-day dining restaurant Corniche, which is known for its local and international food fiestas.

For La Comida Mexicana, Corniche lays out a spread of the finest Mexican dishes, as prepared by Mexican guest chef Daniela Romero Silva, who came in straight from Mexico specifically for the food promotion. Chef Daniela, who hails from Sonora, Mexico, runs her own restaurant, Las Chulas Restaurantes, which she opened in December 2012 and now has three branches.

Assisted by Chef Justin Abulaban and the culinary team of Corniche, she prepares a wide selection of authentic Mexican appetizers, pica-picas, wet burritos and fajitas, a soup of the day, hot dishes and desserts.

Mexican appetizers and pica-picas that grace the daily buffet spread at Corniche include Chicken, Spinach and Pepper Jack Enchiladas, Grilled Jalapeño Peppers, Queso Fundido with Native Chorizo, Mini Chicken Chimichangas, Beef Flautas with Avocado Dip, Chicken Quesadillas, Chicken Chimi from the Oven, Terrific Turkey Chili, Pulled Pork Taquitos, and Pork Carnitas. Hot dishes from Mexico that diners of Corniche get to enjoy for the duration of the Mexican food festival are Beans and Steak Pan with Onion and Garlic, Sweet Corn in Honey Milk, Beef Carni (marinated flank steak with pepper beans and chili), Mexican Baked Fish with Hot Spinach Dip, Albondigas Meatballs, Pescado Guachinango a la Veracruzana (fish fillets with spicy sauce, olive oil, tomato, onion, garlic, chile guero, green peppers, olives, capers, laurel, thyme, salt and pepper), Camarones en Salsa de Chile Chipotle (sautéed shrimps in chipotle sauce), Carne Tampuquena (sautéed beef with chilis, refried beans, guacamole and enchilada), Mexican Fajitas (sautéed onion, green peppers and Mexican spices, served with a choice of chicken, beef or shrimps), and Queso Fundido (Mexican melted cheese, with mushrooms or chorizo, served with soft tortilla).

Held in partnership with the Embassy of Mexico, headed by Ambassador Julio Camarena Villaseñor, La Comida Mexicana also pays great attention to the exquisite desserts of Mexico. Individual portions of Arroz con Leche (rice with milk), Flan Napolitano with Caramel (similar to the Filipino leche flan), and Manzanas Almendradas (mini apple tarts) are available at the dessert buffet at all times, while diners can have as many Cinnamon Churros Chocolate Sauce as they fancy. The churros with a thick chocolate dipping sauce are particularly good.

La Comida Mexicana is available at Corniche until Sunday, September 20, 2015, for Php2,550 nett per person. What’s more: Mexican nationals, Mexican Embassy employees and Diamond Indulgence members get to enjoy the buffet at a discounted price upon presentation of an identification card.

INDONESIA and the Philippines, neighboring Asian countries, have a lot of things in common. For one, Indonesians and Filipinos look very much like each other. You can mistake one for the other and talk to an Indonesian in Tagalog even. Their brown complexion are the same, and their facial features and body built are glaringly similar. Apart from that, Indonesian and Filipino cuisines have a lot in common as well. They both have atcharas (pickled vegetables) and crispy fritters—okoy or small shrimp with julienned vegetables for Filipinos, and bakwan sayuran or corn fritters for Indonesians—among their many appetizers; and their desserts, mostly kakanins or rice cakes with grated coconut, can be put together effortlessly and no one can tell the difference.

Indonesian cuisine also has a lot in common with Malaysian and Singaporean cuisines. These include Beef Rendang, which Indonesians call Rendang Padang (famous Indonesian beef stew with spices and herbs), as well as Chicken Satay or Sate Ayam (grilled chicken skewers) and even the dessert Kueh Lapis or Lapis Legit (layered cake).

These familiar Indonesian fares—and more—are on showcase at Oakwood Premier Joy-Nostalg Center Manila’s The Nostalgia Dining Lounge in the ongoing Indonesian Food Festival, whose last day is tomorrow, September 18, 2015. Together, the two Indonesian guest chefs prepare a wide array of authentic Indonesian dishes ranging from appetizers, salads and soups to main dishes, desserts and beverages. Available daily in special lunch and dinner set menus and in a weekday lunch buffet priced at Php999 nett per person, the Indonesian food promotion features such familiar Indonesian dishes as Gado-Gado (deconstructed salad of stringbeans, tofu, carrots, beansprouts, cabbage, potatoes and boiled egg wedges with a type of peanut sauce) and Mie Goreng (Indonesian fried noodles). Served in generous portions and plated beautifully, most with edible flowers sourced from farms in Tagaytay, the country style breakfast offerings include Corned Beef Breakfast Sandwich, which is house made corned beef with melted onions, fried egg, White Cheddar and Parmesan fries; Country Ham, which is house made country ham served with sweet corn pudding and Redeye gravy; Steak Frites, which is a huge USDA Beef Tenderloin with Bordelaise sauce, served with petite organic greens and paprika-Parmesan fries; and Brunch Burger, a juicy grilled USDA Angus Beef Patty layered with crispy double smoked bacon, Cheddar, tomato, an over-easy egg and paprika mayo, served with Parmesan fries.

The cured meats are, as Restaurant Verbena’s executive chef Celmar Ambida puts it, house made. “The ham, for one, is made here. We brine it for two weeks, and then it is cooked over slow fire for 16 hours. I believe in slow cooking because it brings out the natural flavors of the meat we’re cooking,” explains Chef Celmar, a Batangueño who learned how to cook from his grandmother at a young age.

For meat lovers, another must-try is the Pork Belly Benedict, which is Chef Celmar’s Filipinized version of the famous breakfast fare, Eggs Benedict. His version has a generous piece of crispy pork belly (think lechon, lechon kawali and bagnet!) taking the place of bacon, layered with pickled red onion, soft poached eggs and salted egg Hollandaise. Then there is Prosciutto & Soft Eggs, a simple fare with 63 degree eggs, shaved Prosciutto ham, asparagus and basil pesto on freshly baked English muffin.

Those who want to indulge in seafood for brunch may opt for the Smoked Salmon (generous slices of premium smoked salmon layered with farmers kesong puti, pickled red onion, Tagaytay tomatoes and capers on house bagels) or the Bouillbaisse (a combination of Chilean seabass, salmon and snapper fillets, shrimps, mussels and clams poached in a Provencal fish broth, and served with rice pilaf and saffron aioli).

Other items on the brunch menu that may tickle the fancy of diners who love eggs are Spanish Broken Eggs (house made chorizo, tomatoes, peppers, soft eggs and house made sweet potato chips) and Eggs en Meurette (soft egg poached in red wine, mushroom duxelle, garlicky toast and Cabernet bacon jus).

Each of the savory brunch menu items are quite interesting and would be lovely to enjoy with butter croissants, Danish pastries, duck fat biscuits, hot pandesal and banana bread, with fresh fruits and a glass of juice or a cup of freshly brewed coffee, tea or hot chocolate—all of which are included with any order from Restaurant Verbena’s exquisite brunch menu.

Held in partnership with New World Saigon Hotel, Vietnam Airlines and the Embassy of Vietnam, A Gastronomic Journey to Vietnam lays out spreads of Vietnamese dishes prepared by two Vietnamese guest chefs who “flew” in from New World Saigon Hotel in Vietnam, Chefs Tran Van Dong (Chef Dong) and Tran Thanh Thuy (Chef Ana). Together, they are manning the kitchen for the duration of the promotion to make sure diners get a taste of authentic Vietnamese dishes prepared the traditional way using the freshest herbs, produce, seafood and meats. These include a variety of fresh herbs and spices, including lemongrass, mint, coriander (also known as cilantro or wansuy), bird’s eye chili, lime, basil leaves, galangal and cinnamon.

Due to its use of fresh, natural herbs and spices to flavor its dishes and its strong leaning towards fresh vegetables and seafood, Vietnamese cuisine is considered as one of the healthiest cuisines in the world. So, health and fitness buffs, as well as those who enjoy their food light and fresh, take to Vietnamese cuisine like second nature. Vietnamese food boasts of just the right balance of flavors—sweet, sour, salty and tangy—and uses minimal oil in its cooking. Take the very popular Pho, which has protein in its thinly sliced beef, combined with beansprouts, onion, spring onion, bird’s eye chili, herbs and spices, in a flavorful clear soup that has been slow-cooked for hours. Vietnamese desserts are interesting to try because there are familiar items and there are totally unfamiliar ones. There’s Corn and Coconut Sweet Soup, which is similar to the Filipino corn dessert with gata (coconut cream) called Guinataang Mais, and Sweet Banana and Tapioca Soup, which is pretty close to our Guinataang Halo-halo. The Sweet Mung Bean Soup with Seaweed is a curious combination, but it’s good.

Vietnamese desserts go well with Vietnamese coffee, which is strong, dark and bitter with a hint of almond flavor. It is brewed in a single-cup filter that sits on top of a coffee cup filled with a thin layer of condensed milk at the bottom. The brewing coffee then drips into the cup, forming a layer of strong coffee over the condensed milk. After the brewed coffee shall have finished dripping into the cup, the coffee and the condensed milk are stirred to blend and poured over a glass filled with ice cubes for a cold caffeine fix.

The tradition of Vietnamese coffee drinking, which traces its roots to its French heritage and Vietnam’s standing as the world’s fourth largest coffee exporter, can be enjoyed with the Vietnamese food festival at Market Café or ordered, hot (Ca Phe Sua Nuong) or cold (Ca Phe Sua Da), with a variety of Vietnamese delicacies for two at New World Manila Bay Hotel’s The Lounge.
