THE secret to long life and good health all boils down to the basics—what nature has gifted us with. Acai berries also help heal ulcers due to their antibacterial properties, protect and repair the lower esophagus damaged by the acid-reflux disease called GERD with their broad array of antioxidants, promote the health of the colon and the entire digestive tract, and thwart retinopathy that often leads to blindness.

These powerful berries’ low glycemic index also makes them ideal for diabetics, apart from the fact that they help control appetite and delay hunger so that they can aid in healthy weight loss. Their regenerative nutrients help slow down aging, with phytosterols helping improve skin quality and defend against premature wrinkles. But their real power lies in their ability to thwart cancer, relieve asthma, reduce the risk for Alzheimer’s disease, and promote the overall well-being of the body.

“They consume the berries regularly, and it is what they use to remedy aches and pains, from infection to stomach problems,” explains Cathy Salimbangon, vice president for marketing of Organique Inc., during the recent formal launch of Organique Acai Premium Blend held at Prime 101 Restaurant in Makati City.

A registered nurse by profession, Salimbangon worked in the Geriatrics field in the United States and Canada for several years. During the course of her work, she saw how lifestyle impacted one’s body and ‘discovered’ the acai berry as a superfood. This prompted her and her husband Elton, who worked in the nutraceuticals industry, to harness the powers of the superfood and make it available to their fellow Filipinos. Together, they worked on creating Organique Acai Premium Blend, the king of superfoods in juice form packaged in a bottle, in the U.S. and, in 2009, finally launched it as a U.S. made but proudly Filipino health product.

“It’s very important to be pro-active in taking care of your body. It is best to start while you’re young and to go for natural measures in taking care of your health as much as possible,” Salimbangon stresses.

During the recent luncheon event, two celebrity “endorsers” and certified Organique Acai drinkers—health and wellness guru Cory Quirino, and TV personality and dance diva Regine Tolentino—talked about their experiences on taking the acai drink on a regular basis.

“I don’t eat anything cooked in the morning. I have a mini fast, and I do water flush. I put a little lemon and calamansi juice in my water and drink it, then I take 1/4 cup of Organique Acai. It’s not just a drink for me, but a lifestyle,” says Quirino.

Tolentino also regularly drinks Organique Acai with her whole family. “I noticed that from the time I started taking it, which was in August, 2014, I never got sick, not even with colds. She takes it in the morning but takes an extra dose in the evening when she’s had a drink too many in a party or she’s super tired from a Zumba session.

The two celebrities were joined by Salimbangon and Dr. Sonny Viloria, a medical doctor who has also trained in natural medicine. “Organique Acai has been in my clinic for six years now. ARCA South Hosts ‘SyncRUNize’
A One-of-a-Kind Adventure Race

ARCA South, the 74-hectare estate that is being developed to become the newest CBD (Central Business District) in Taguig City, is staging SyncRUNize on September 19, 2015.

A one-of-a-kind mobile app integrated adventure run, SyncRUNize is unlike regular 5km runs because it challenges both body and mind through a number of physical obstacles as well as mental drills. Participants will have to download the exclusive SyncRUNize mobile app, available on Google Play and iOS, on their smartphones running on iOS or Android. This app will be used during the race itself, as participants will be getting directions from the app from one checkpoint to another—surpassing physical challenges and solving puzzles before they can get to the next checkpoint. Yes, it’s not all physical challenges first then mental exercises but a combination of both throughout the race.

Ayala Land, developer of ARCA South, has partnered with Guerilla Race, organizers of the fierce sport Guerilla Race Series, to specially design the obstacle course. It has also teamed up with Go Go Hunt, which designed the mental drills, including calculations, stock knowledge tests and abstract reasoning; and also with The North Face, Fox and Oculus Archery, who provide the other physical challenges, such as lifting weights, doing push-ups and engaging in high-impact aerobics moves, and hitting the bull’s eye in an archery challenge, of course. Other physical challenges to hurdle include monkey bars, a 45˚ inclined wall, and an obstacle course of spare tires.

Partner-beneficiary of SyncRUNize is the Help Educate and Rear Orphans (HERO) Foundation, a 27-year-old organization that takes care of the needs of children of soldiers who were killed or incapacitated in the line of duty.

A modern adventure race designed to embody the principle behind ARCA South as a ‘City in Sync,’ SyncRUNize covers a 5km. route that can be finished in less than an hour. Participants are guided from one obstacle to another through the SyncRUNize app and there will also be marshals present. The race will have two categories: Individual and Group. In the Individual category, the participant who finishes strong through all the physical and mental obstacles and has the best time wins. In the Group category, where participants must take part in groups of 4, the team that finishes strongest through all the physical and mental challenges with the best cumulative time wins.

Registration for the adventure race can be done online through www.arcasouth.ph or visit any Chris Sports branch nationwide until September 18, 2015. Individual registration is at Php1,100 per person while group registration in groups of 4 is at Php990 per person.

Upon registration, participants will receive a race kit with a SyncRUNize singlet, race bib, cell phone splash-proof pouch and exciting prizes from sponsors.

The SyncRUNize app, which is crucial in the race, is available for download on Google Play until September 19, race day, while the iOS version will only be available from September 18 to 19. The race course will have online and offline versions, so participants can run through the course without the need for Internet access, although they must sync in their results at the end of the race. WiFi access will be available for every participant at the finish line.

At the end of the race, participants can head for Sync City to enjoy the interactive booths and the food market.

Prizes at stake in the Individual race are Php8,000 in cash and prizes for the First Place, Php5,000 in cash and prizes for the Second Place, and Php3,000 in cash and prizes for the Third Place. In the Group category, the prizes are Php15,000 in cash and prizes for the First Place, Php8,000 in cash and prizes for the Second Place, and Php6,000 in cash and prizes for the Third Place.

To get to ARCA South, participants can take the East Service Road along South Luzon Expressway or C5 in Taguig City, while shuttle service will also be available at pickup points Tower 1 in Ayala Avenue, TriNoma in Quezon City, and Alabang Town Center in Muntinlupa for a minimum fee of Php30 per person roundtrip.

WHEN Bosch recently unveiled its all-new Bosch Series 8 Ovens during the World Food Expo 2015 (WOFEX 2015) held at the SMX Convention Center, it featured three chefs in a baking demo that highlighted the versatility of the new smart oven. One of the three featured chefs was Chef Jill Sandique, who is undeniably one of the best pastry chefs in the country today, and in her demo, she showcased a number of exciting dishes, including Cheese Scones.

Like regular scones, Chef Jill’s savory Cheese Scones can be eaten alone, although they’re best enjoyed with clotted cream and jam, which was what Chef Jill did after her demo—sample out what she made, with all the works.

She used a Bosch Series 8 Oven in baking her scones, and it turned out evenly cooked batches of Cheese Scones whose freshly baked aroma wafted in the air and made everyone hungry. Chef Jill also utilized other Bosch appliances, such as the Bosch Food Processor, in preparing the scones.

2 cups sifted all purpose flour
1 tbsp. baking powder
1/4 tsp. salt
pinch of nutmeg
ground black pepper to taste
1/4 cup grated Parmesan or Pecorino Romano Cheese
1/2 cup grated strong Cheddar Cheese
1/2 cup unsalted butter
2 large eggs, lightly beaten
1/3 cup heavy cream, or as needed
milk or egg wash for glazing
paprika for sprinkling (optional)

1. Preheat Bosch Oven to 200˚C. Line a half sheet pan with parchment paper. Set aside.
2. In the bowl of a Bosch Food Processor, combine all purpose flour, baking powder, salt, nutmeg and black pepper. Pulse for a few seconds, then add the cheeses and the butter.
3. In a small bowl, beat together eggs and heavy cream. Blend well. Toss into the flour-cheese mixture.
4. Knead lightly, then form into a disk, about one-inch thick. Using a floured round cutter, cut into two-inch rounds.

5. Arrange unbaked scones on prepared pan. Brush top with milk or egg wash, then sprinkle with paprika, if desired.
6. Bake for 20 minutes or until done.
7. Remove from pan. Serve immediately at room temperature.

*Chef’s note: These scones are best served with smoked salmon, crème fraiche or sour cream, cream cheese, chopped eggs and caviar. Garnish with chopped chives or dill.

BOSCH, a leading German brand of household appliances, recently unveiled its new smart oven series called Bosch Series 8 Ovens, at the World Food Expo 2015 (WOFEX 2015) held at the SMX Convention Center.

The new Bosch built-in Series 8 Ovens, granted the 2015 German Design Award, features 21 new technologies, including intuitive and sophisticated sensors that makes it possible for even kitchen neophytes to whip up a delicious feast. It takes the guess work out of cooking, so very minimal effort is needed to come up with awesome dishes.

The result of many years of dedicated research and development by 130 engineers as well as feedback from over 7,000 customers, the all-new Bosch Series 8 Ovens can microwave, steam, roast and bake. Bosch makes use of its exclusive and newly developed 4D hot air technology to ensure even heat distribution for well-balanced cooking results. Delivering the consistent heating is a symmetric alternating fan, driven by the efficient EcoSilence Drive motor, so there is no need to guess the appropriate shelf level on which to place the baking tray filled with cupcakes or the roasting pan. Anywhere you put it, it still bakes and/or roasts evenly. It’s an economical feature because you can simultaneously bake four trays of cupcakes and they all four shelf levels bake evenly. Bosch has also integrated this 4D hot air technology with a new steam injection function, thus making it possible to roast meat with hot air and steam and achieve the perfect roast, which is crispy on the outside and succulent on the inside. Aside from the traditional steaming of fish and vegetables, you can also bake in combination with steam and take advantage of the oven’s integrated microwave feature to reduce cooking time by up to 50%.

For baking purposes, the Series 8’s PerfectBake sensor regulates the moisture levels in the oven cavity for an even bake, and you need only to select the desired bake-type, and the oven automatically sets the ideal heating mode, temperature and duration of baking, so there’s no chance you’d end up with underbaked crusts or burnt cakes.

This new smart oven also comes with a PerfectRoast meat probe, a device that measures the core temperature of meats and gives you an exact sense of the doneness of a roast at three different points.

To demonstrate the versatility of the new Bosch Series 8 Ovens, a cooking demo featuring three chefs was held during the launch. Chef Jean-Charles Dubois from the famed Balzac Brasserie and Bar in Singapore planed in for the demo. Following his demo was that of Chef Jill Sandique, easily one of the most talented pastry chefs in the country today. Chef Jill made Whole Wheat Zucchini and Carrot Bread; Orange, Rosemary and Thyme Bundt Cake with Summer Berries; Cheese Scones, which she served with clotted cream, curd and jam; and Chocolate Hazelnut and Banana Mousse. Closing the demo was Chef Kim Castillo, who made Edamame Hummus.

endive n banana heart salad-IMG_0543LAST July (2015), I blogged about the visit of Chef Jeff Claudio to the Philippines. The head chef of Burnt Ends in Singapore, he has worked for some of the top restaurants in the country, including Noma, a two Michelin Star restaurant in Copenhagen, Denmark, of celebrated chef Rene Redzepi, chosen as the World’s Best Restaurant by the annual S. Pellegrino World’s Best Restaurant Awards from 2010 to 2012 and 2014; celebrity chef Thomas Keller’s new American and French restaurant Per Se, recipient of New York Times’ Best Restaurant in New York City award; Yours Truly, a casual dining restaurant in Toronto, Canada; Viajante in London; and Rockpool in Sydney, Australia.

The cousin of our very own celebrity chef Jessie Sincioco, who is one of my personal favorites, Chef Jeff Claudio was at Chef Jessie Rockwell Club for a limited engagement, serving a full-course menu that never failed to wow diners. His cuisine is simple and fuss-free, so he had the tablecloths removed from the dining tables and replaced it with brown paper; and his plates, which were for sharing, looked appetizingly good but are not overly fussed over.

One of the dishes that really stood out for me was Chef Jeff’s Endive & Banana Heart Salad with Pomelo and Walnut. It combines leaves of endives with thin strips of banana heart, pomelo pulp and roughly chopped walnuts. It looks like a variant of a regular garden salad, but it has a unique dressing of brown butter cooked with orange juice and sherry vinegar. It tastes like burnt caramel or toffee, not too sweet, not overpowering at all. It’s just right.

I asked Chef Jeff for the recipe of his Endive & Banana Heart Salad with Pomelo & Walnut, and he gladly shared it.

1 head endive
60 grams banana blossoms, julienned
30 grams pomelo pulp
30 grams walnuts, roasted and chopped
30 grams brown butter
30 grams wild honey
30 grams orange juice
10 grams sherry vinegar
100 grams Pecorino cheese, finely grated
sea salt to taste

1. For the salad, cut endives into spheres and remove the core. Arrange the leaves on a salad plate.
2. Add the julienned banana blossoms.
3. Top with chopped walnuts and pomelo pulp.
4. Prepare the dressing. Heat butter until it turns light brown or caramel in color. Add honey, orange juice and sherry vinegar. Cook over medium heat for 3 more minutes. Remove from fire and let cool.
5. To assemble, spoon brown butter sauce evenly over the salad. Top with grated Pecorino cheese and sprinkle with sea salt to taste.
