Spanish Milkfish Sandwich

Spanish Milkfish Sandwich (photo) 071414I LIKE making sandwiches. Likewise, I enjoy making my own fish, chicken and puso ng saging burgers, although I also sometimes fill my sandwiches with tuna salad, egg salad, Spanish sardines and corned tuna and layer them with tomato and cucumber slices on a bed of curly or Romaine lettuce. I don’t like using regular tasty loaf bread for my sandwiches, though. I figured, sandwiches I make are special so the bread, too, has to be special. My preference happens to be whole wheat bread, and Gardenia’s High Fiber Whole Wheat Bread happens to be one of my biggest favorites.

10 slices Gardenia High Fiber Whole Wheat Bread
1/2 cup mayonnaise
1/4 cup dried mangoes, store bought, chopped
1 cup Spanish milkfish in bottle, drained
lettuce leaves
5 pcs. cheese singles, store bought
1 pc. salad tomato, sliced

1. In a small bowl, combine mayonnaise, dried mangoes and flaked Spanish milkfish. Mix well.
2. Make a bed of lettuce on a slice of bread, then spread a good amount of the mixture over it. Top with a piece of cheese singles and then tomato slices. Cover with another slice of bread. Repeat with the rest of the bread slices to make five whole sandwiches.
3. Cut each sandwich diagonally in half.
4. Serve and enjoy, or wrap for baon or to eat on the go later.

Makes 10 half sandwiches.
