With Chef Chamnan at the helm of the kitchen from May 20 to 26, 2015, the Thai dishes that emerge from the kitchen of Spices restaurant are as authentic as it can be. Chef Chamnan gives diners who come to catch the ‘Tastefully Thai’ promotion an authentic taste of Thailand’s distinctive flavors and exquisite signature dishes, including Phad Thai (a stir-fried noodle dish with shrimps, beansprouts and peanuts), Som Tam (raw papaya salad with tomatoes and cashew nuts), Thab Thim Krup (ruby water chestnuts with coconut milk and crushed ice), Khao Niew Ma Muang (mango with sticky rice), and Sang Kha Ya Fak Thong (steamed custard in pumpkin). These are iconic Thai dishes, so Chef Chamnan presents them just as they should be—prepared the authentic way and presented in all their simple but appetizing glory.

Known for crafting classic Thai cuisine with a contemporary twist, however, Chef Chamnan also serves up a variety of exciting homestyle dishes, including a number of dishes prepared based on recipes passed down over the centuries by cooks at the Thai Royal Palace. So, dining on these dishes at Spices during the ‘Tastefully Thai’ promotion gives diners the unique experience of eating what the Thai royalty enjoys and in a stylish setting and regal ambiance, too.

During the formal opening of Tastefully Thai at Spices, intimate buffet stations were put up to give guests a taste of Chef Chamnan’s Thai dishes, such as Som Tam (papaya salad), Gai Yang (grilled marinated chicken), Kor Moo Yang (grilled marinated pork with chili sauce), Satay Pork, Chicken and Squid with Peanut Sauce and Ajad Sauce (skewered meats), Phad Thai (stir-fried flat noodles featured in an interactive station with a wide choice of condiments and toppings on the side), and Thab Thim Krup (water chestnuts with coconut milk, jackfruit, coconut shreds and crushed ice).

Other dishes were served by the waiters as pass-arounds, including Pomelo and Sesame Cone, Spring Rolls, Rice Paper with Shrimps and Chicken Salad on mini tart shells.

Chef Chamnan was presented by The Peninsula Manila general manager Sonia Vodusek-Vecchio and was accompanied by the hotel’s executive chef Mike Wehrle and Thai chef de cuisine A. Phaithoon. There were also Thai dance performances to keep the guests entertained, while fruit and vegetable carving, Thai style, gave the Thai food promotion a culture factor, giving guests a glimpse of traditional Thai culture and arts.

Aside from getting to taste the products on showcase during the trade show, New Zealand Food Connection participants also got to enjoy a VIP lunch prepared by the Fairmont chefs led by Chef Christine Zarrandin, who made full use of New Zealand ingredients in the dishes. The menu: New Zealand King Salmon paired with Villa Maria Private Bin Sauvignon Blanc, New Zealand Natural Berry Sorbet to cleanse the palate, New Zealand Lamb Rack Wellington and Braised Shanks paired with Babich Gimblett Gravels Merlot/Cabernet 2013, finished with Kiwi Fruit Pavlova for dessert.

MOTHER’S Day may be over, but the incredible sacrifices that moms make for their children cannot be confined to just one day of celebration. It’s a continuous process, a series of small sacrifices, that moms make to ‘momazing’ moments—a child’s first step, a competition won, passing the auditions for the school choir, any special instance that sparks a sense of pride, joy and accomplishment—happen. Scott’s from GlaxoSmithKline (GSK), the brand behind Scott’s Vitamin C products, recognizes such sacrifices and such proud moments, and so, in support of all moms’ efforts to help their kids reach remarkable milestones, it launched its #Momazing Campaign with a two-day fun mom-and-kid event held at the Event Center of SM Megamall last May 9 to 10, 2015.

The campaign highlights the special bond that exists between parents, particularly moms, and their children, and aims to not just recognize and celebrate this but also share these amazing mom-and-child experiences online to inspire more moms to be ‘momazing.’

The event, which was hosted by Daphne Oseña-Paez and Dimples Romana, both moms, saw three amazing moms taking center stage and sharing their own stories of motherhood with the audience, which was also made up of moms. These three moms were Fleur Sombrero, a working mom; Michelle Lim, a full-time mom; and Michelle Ressa Aventajado, a mom with a child with Down’s Syndrome.

Fleur Sombrero is a civil engineer who heads the post-construction group of a major real estate company, so she works from 8:00 a.m. to 8:00 p.m. on most days. While she spends a lot of time at work, she makes sure she is able to squeeze in quality time with her daughter Annika.

“In many of her firsts, I was there,” she proudly announces.

But being a full-time mom has its downs, too, and one such time when she felt so guilty about having to work long hours and not being there with her daughter all the time was when her daughter was 3 and she was presenting to the ManComm when Annika got sick and she had to take her to the hospital. She felt so guilty, but her daughter told her that she’s still the best mom in the world.

“I was touched, because, despite having to work, my daughter still felt that I was still the best mom for her,” shares Fleur, who constantly has to deal with mommy guilt.

She adds: “Mommy guilt never goes away. You just have to deal with it and not dwell on it. As long as you know that you’re doing your best for your children, even though you’re also working, you should not be affected. Just make sure that whatever little time you get to spend with your kids, you make it quality time.”

Michelle Lim, meanwhile, is a full-time mother of two who documents her daily adventures with her children in her blog. Before she got married, she worked in advertising and public relations. But when she had two kids, she decided to stop working and become a full-time mom. She sacrificed her career to focus on her kids, and she’s proud that she was able to leave work behind and never look back.

“I realize that not all women can do that, not all women can be full-time moms. Before, I also could not imagine myself to be a stay-at-home mom. It’s not for everyone. You really have to assess yourself and consult with your husband before you do that,” Michelle says.

Full-time moms constantly go through challenges of being just home, and, for Michelle, one of these challenges is missing work. “There are moments when I want to go back to work. I get depressed. So I have taken on some projects just to keep me busy,” she relates.

Speaking of challenges, Michelle Aventajado has quite a challenge on her hands as she takes care of her daughter, who was born with Down Syndrome.

“The first night we were in the hospital and I was told of her condition, I was brought to my knees and feet. I didn’t know why I was ‘gifted’ with a child with Down Syndrome. But it didn’t take long for me to realize that she really was a gift. She had to have an operation, and I bargained with God. I promised that I would not let one tear of sadness drop on my daughter when I breast-feed her. My husband was my rock and he carried us through it. I know my daughter was going to be OK. She’s amazing and she gives us ‘momazing’ moments every day. Her coming shifted the paradigm of the family on what’s important in life,” Michelle shares.

This sharing of ‘momazing’ moments by the three featured moms left the audience teary-eyed but celebrating motherhood. And aside from these inspiring stories shared by Fleur Sombrero, Michelle Lim and Michelle Aventajado, guests during the launch also got to enjoy face painting, video recording of messages, balloon twisting, games, hourly games, and samples of Scott’s Vitamin C (100% Vitamin C in pastilles).

Scott’s other product is Scott’s Emulsion, which contains Calcium that contributes to bone development and Vitamins A and D which may help support the immune system.

Truffle Popcorn

AND I thought that Truffle Fries were the ultimate gourmet comfort food! I discovered Truffle Fries a few years ago, during the opening of Chef Gino Gonzalez’s Buenisimo restaurant in the Tomas Morato restaurant area of Quezon City. I recreated it at home several times using U.S. Frozen Potatoes that are now readily available in the frozen section of major supermarkets, and I was pretty successful with my attempts.

Just recently, I discovered Truffle Popcorn when I attended the Craft Mania workshop session on calligraphy conducted by Anina Rubio at the East Wing Atrium of Shangri-La Plaza. The event also served as the launch of the mall’s Desserts Fair, which was taking place the weekend after Craft Mania. Since the Desserts Fair gathered together all the bakeshop and dessert a shop tenants of the mall, a number of them put together a dessert buffet during the Craft Mania workshop as a way of giving mall-goers a taste of what they have to offer. I got to taste a few of those delicious bite-sized treats, but I was most amazed to discover Truffle Popcorn. There was a small paper cup of popcorn that was placed in front of me. I thought it was regular popcorn, but when I dug into it and popped a few into my mouth, the essence of truffle filled my mouth and I was hooked. I love Sour Cream and Chives flavored popcorn and Wasabi popcorn, too, but this was something else. Worth loving, too!

So, a few days ago, when I was looking for something to munch on as I sat down to write articles, I remembered the Truffle Popcorn that caught my fancy and decided to make an attempt to replicate it. I reached for the small bottle of Sabatino Tartufi Olive Oil Infused with Black Truffle in my ref and used it to flavor my popcorn. It’s good! It would be better if I added more salt, but I consciously salted my popcorn very lightly to keep it healthy. It would probably also work even better if you use black truffle shavings, but that would make it very very expensive. So, I will stick to my Truffle Popcorn drizzled with truffle oil.

2 tbsps. olive oil
1 tbsp. Anchor Butter
drizzling of truffle infused olive oil
1/2 cup raw popcorn kernels
salt to taste
dried Porcini mushroom

1. Place olive oil, butter and a little truffle oil in large saucepan, stockpot or Dutch oven with lid. Heat just until butter is melted.
2. Add popcorn kernels and mix to make sure all kernels are coated with oil. Put the lid on and wait for the corn kernels to pop. Shake pan a bit every now and then.
3. When corn kernels start to pop, Shake the pan lightly to help get the corn kernels coated with hot oil and pop.
4. When the popping slows down to almost none, turn off heat.
5. Transfer the popcorn to a big bowl, drizzle with more truffle infused olive oil, season with salt and grate some dried Porcini mushroom from a mill.
6. Enjoy!

THERE’S so much going on at Shangri-La Plaza, and two of the most recent crowd-drawers were Craft Mania at the Shang: Arts and Crafts Fair and Workshops and Desserts Fair at the Shang, both of which took place at the mall’s posh East Wing.

Craft Mania at the Shang, which had a three-day run at the Lower Ground Level and East Atrium of the East Wing, pooled together the mall’s arts, crafts and complementary brands for a creative and educational weekend that brought out the artist in mall-goers.

There were exciting displays from participating brands, who also offered special promos, while an array of workshops had both new and passionate arts and crafts enthusiasts indulging in sketching, do-it-yourself card making, brush calligraphy, polymer clay, basic pottery, typography, chalk and sand art, as well as various coloring activities that included watercolor. Some of the workshops were presented by Stabilo and Scribe Writing Essentials, and calligraphers Fozzy Dayrit and Anina Rubio lent their precious time and talent to the calligraphy sessions. Since the workshops were offered free and were even inclusive of materials, those interested in learning certain arts and crafts really turned out during the workshops held at the East Atrium. There were also Princess Diva musical performances by Trumpets Musicademy and ballet performances by JNA Dance Studio.

Desserts Fair at the Shang, which followed the next weekend, gave mall-goers a saccharine-filled surprise when the participating tenants set up booths at the Lower Ground Level of the mall’s East Wing and presented a mouth-watering array of new and irresistibly delicious desserts. Participating brands included Baker’s Fresh, Dippin’ Dots, Epicurious, Gelatissimo, Golden Spoon, Poetry & Prose, Red Ribbon, Villa Del Corte, and Wicked.

“The Shang wants to enrich everyone’s summer with dynamic lifestyle events.
