CELEBRITY chef Sau Del Rosario has just launched his first cookbook, 20 Years of Love + Cooking, and it’s now available in National Bookstore and Fully Booked outlets nationwide.
Launched via a grand cocktail party at Epicurious, Shangri-La Plaza, by AKME Publishing Group Corporation in partnership with the Center for Culinary Arts Manila (CCA), the book features awesome recipes inspired by Chef Sau’s travels around the world. The recipes tell the story of his journey and struggles through the years, as he climbed up the culinary ladder. These include heirloom dishes from his hometown Pampanga, his travels and stints in Europe and then Asia, and his journey back home to the Philippines. The book also features testimonies of people whom he has worked with or grown with in the culinary industry, his family, his friends and colleagues, celebrities and personalities, and international and local chefs who have met him.
Ask Chef Sau and he’ll tell you that the book was practically 20 years in the making.

So, when 20 Years of Love + Cooking was finally launched, the who’s who in the local culinary world turned out to celebrate the joyous occasion with the talented and amiable chef despite the fact that a lot of events were happening simultaneously all over the metro on that day.

Keeping the guests happily fed were CCA students, headed by Chef Tristan Encarnacion, who prepared some of the dishes the cookbook, including Hainanese Chicken with Tinola Paella, Brazo de Mais, Durian Panna Cotta, Rosemary and Garlic Roasted Leg of Lamb, Soba with Soft Tofu and Sesame Sauce, Tamales, Salt Crusted Snapper, Malaysian Laksa and Chicken Galantina Roulade. Also providing food and drinks were event sponsors Good Life Noodles, Bounty Fresh Chicken, Philips, Beringer Wines and ESV Meats.

As guests enjoyed the food, Chef Sau joined celebrity friends, Chef Heny Sison and Pampanga’s culinary historian Atching Lillian Borromeo, in a cooking demonstration. Together, they prepared Brazo de Mais, whose recipe can also be found in the cookbook.

Chef Sau is slated to go on a nationwide book tour and book signing, which started this May and ends in October this year. Cooking demos will form part of the book promotion in the metro’s major food expos in the coming months as well as in culinary schools and residential villages in the city.

Diners get to cook and eat their Wagyu steak exactly to their preference and at their own pace
WAGYU beef from Japan is the King of Steaks. It’s high-grade beef known for its excellent marbled meat, which contains various amounts of intramuscular fat beautifully distributed in its meat. It comes from Wagyu cattle, whose genetic predisposition and special diet gives it an excellent sashi (marbling). It has a tender, melt-in-the-mouth texture and an exquisite flavor coveted by steak lovers the world over.
There are four major breeds of Wagyu—Japanese Black, Japanese Brown, Japanese Shorthorn and Japanese Polled. Japanese Black accounts for a big percentage of Wagyu in Japan. The renowned Matsuzaka, Kobe and Saga beef all come from the Japanese Black cattle, which is bred in small cattle farms in the Saga Prefecture, with 34 heads per cattle farm. Tender loving care goes into the breeding of Wagyu beef, which are grain-fed with rice straw, barley, corn and soybeans for over 20 months. During winter, calves in the cattle farm even get handmade calf jackets to help them cope with the cold weather.
Developed as unrivaled beef cattle based on Japan’s high breeding technology, Wagyu beef is graded by the Japan Meat Grading Association using an outstanding method of grading system that takes into consideration both Meat Quality Grade and Yield Grade. Meat Quality assesses the meat’s marbling, color and shine, firmness and texture, and fat color and shine, with Grade 5 being the highest and Grade 1 being the lowest. As for Yield Grade, it is evaluated as A for above average, B for average, and C for below average. The ultimate Wagyu beef is therefore one that is graded A5, which assures diners of melt-in-the-mouth goodness for that ultimate Wagyu steak experience.

SUPER Bowl of China, the Chinese restaurant that serves authentic Cantonese cuisine, has rolled out its new menu, which consists of four new dishes and one exciting drink—Hot Chicken Salad, Pork Wanton with Mala Sauce, Beef with Ampalaya & Black Beans, Beef Hofan, and Red Bean Milk Tea.
Hot Chicken Salad (Php270) is much like the popular Hot Prawn Salad, which is now a classic. It in boneless battered chicken fillet tossed in homemade mayonnaise and assorted fruits, and topped with lemon rind. The chicken is crunchy and it goes very well with fruit cocktail in a lightly creamy mayonnaise. Great as an appetizer, it can also be eaten as a main dish with hot, steamed rice.
Pork Wantons with Mala Sauce
The newest addition to the dim sum selections on the menu is Pork Wantons with Mala Sauce (Php95), steamed ground pork meat in wanton wrappers and topped with a mildly spicy Mala sauce.
Beef with Ampalaya and Black Beans
Definitely a main dish to savor and love is Beef with Ampalaya & Black Beans (Php300), which is tender slices of beef and thinly sliced bittermelon sautéed with mushrooms, black beans and select spices, drizzled with oyster sauce and dark soy sauce. Flavors of bitter, salty, sweet and spicy meld in this dish.
Beef Hofan
Beef Hofan (Php260) happens to be another beef dish recently introduced by Super Bowl of China. It’s a noodle dish that makes use of Shanghai flat noodles and sautés these in an oyster sauce and dark soy sauce blend, topped with premium tender beef slices, white onion and white leeks.
Red Bean Milk Tea
The lone drink that has made it to the new menu recently rolled out by Super Bowl of China is Red Bean Milk Tea (Php85), a brewed Chinese tea blended with milk and topped with sweet red beans. It’s Super Bowl of China’s answer to the prolonged interest that the dining public has on milk teas.

These new dishes go well with classic favorites, such as Dimsum Combination Platter (Php310), which comes with pork siomai, hakao, deep-fried wantons, vegetarian spring rolls and pork asado siopao, served with sweet and sour sauce; Lemon Chicken (Php270), breaded chicken fillet fried to a crisp and served with Super Bowl of China’s signature sweet and sour sauce; Sweet & Sour Pork (Php295), which are succulent breaded pork cutlets, sautéed with red and green bell peppers, onion and pineapple in sweet and sour sauce; Braised Tofu with Mushrooms (Php220), hard beancurd sautéed with mixed vegetables and mushrooms in a dark soy sauce and oyster sauce combination; and Steamed Fish Fillet with Garlic (P275), topped with garlic and spring onion.

Desserts include classic Taho (Php110), beancurd with tapioca balls and syrup; Peanut Buchi (Php100), peanut coated balls with peanut paste filling; and Black Gulaman with Lychee (Php95), black gulaman, coconut jelly strips and coconut jelly strips and sugar syrup.
Incidentally, Super Bowl of China at SM Megamall now sports a new look and feel. Drop lights hang from the ceiling, ergonomically refashioned tables and chairs, lattice woodwork and infographic décor.
“This infographic décor is a unique wall accessory that gives guests a quick glance into Super Bowl of China’s history, heritage and best-selling dishes,” explains Laine de Jesus-Vallar, senior marketing manager of Super Bowl of China.
