HAVE you ever tasted French macarons infused with truffle oil and salt? Ah, heavenly! Take one bite at the soft, chewy French macaron with a thin layer of crispy outer crust, and the exquisite flavor of truffle just explodes in your mouth without being too overpowering. This, I got to taste last week when Shangri-La Plaza hosted another media ‘degustation’ to introduce five more concept restaurants that recently opened at the East Wing.

Shangri-La Plaza’s Lala Fojas and Marline Dualan sat down with members of media to lunch on the delicious food of Kettle, Kimukatsu and Ganso-Shabuway Japanese Style Hot Pot, after which we had tea and desserts courtesy of Wicked by Cravings and Happy Cream Puff.

KETTLE

Kettle redefines comfort food by taking popular all-time favorites, such as fried chicken and steak, and serving them with a twist. The familiar flavors soothe not just the palate but the soul as well, while the ‘twist’ gives these dishes something new to look forward to.

Specialties of the house include Buttermilk Fried Chicken. Kettle’s version stays true to its Southern roots, with two huge pieces with crunchy skin on the outside and soft, juicy and tender meat on the inside, served with gravy and corn muffins. It’s good to share. Angus Roast Beef Hash is one of the modern versions of the steak that Kettle offers. It’s Angus beef, roasted and cut into cubes, served with potato cubes and topped with a fried egg. The classic fries also get a makeover, as they are cut into thin strips and fried with herbs like basil and tarragon, tossed with pork belly and served with red pepper aioli in an interesting dish called Pork and Potato Strips.

KIMUKATSU

Kimukatsu serves the must-have Japanese dish these days, the tonkatsu. The most famous pork cutlet restaurant in Japan with international outlets in the United States and Korea, Kimikatsu opened its first Philippine branch at Shangri-La Plaza’s East Wing. It takes pride in its famous crispy and juicy pork cutlet that uses only choice quality meat that’s carefully prepared to bring out its finest flavor. According to Kenji Komuro, the director of public relations of the katsu joint, the katsu that the restaurant serves consists of 25 thin layers of pork, so its texture and tenderness are something diners will not find elsewhere.

The katsu comes in seven flavors: Plain, Garlic, Black Pepper, Cheese, Negi Shio (marinated spring onion), Yuzu Kosho (yuzu fruit and green chili pepper), and Ume Shiso (Japanese sour plum and shiso leaf katsu). Take your pick.

The katsu is great to eat with shredded cabbage salad with roasted sesame dressing.

GANSO-SHABUWAY JAPANESE STYLE HOT POT

The “shabuway” in its name is a made-up word that was coined to mean “the road to shabu-shabu for shabu-shabu lovers.” As its name suggests, Ganso-Shabuway Japanese Style Hot Pot specializes in the popular Japanese dish called Shabu-Shabu, which means a pot of flavorful stock with thinly sliced beef or pork, even seafood, and vegetables boiled in the broth.

Ganso-Shabuway also has appetizers, such as miso-glazed eggplant Nasu Miso Itame, Beef Gyoza, and marinated and deep-fried Chicken Karaage, on its menu, as well as seafood items like Tuna Belly and Ebi Fry, and rice bowls that include Beef Curry, Ebi Curry and Beef Yakiniku.

WICKED BY CRAVINGS

Wicked is where dessert fantasies come true. It’s a dessert concept restaurant by the Cravings group and it offers cakes, cupcakes and other sugary confections served with tea, specially concocted alcoholic and non-alcoholic beverages.

The menu is divided into three categories: Wickedly Sinful, which includes Brookies (cookies sandwiched in between fudgy brownies), best enjoyed with a shot of milk, and Wicked Stepmother Apple Pie (apple pie in muffin form); Wickedly Sexy, which uses ingredients that increase the body temperature, such as chili; and Wickedly Intoxicating, which are desserts infused with alcohol, such as White Russian Fondue (a deconstruction of the White Russian cocktail, with cake pops rolled in roasted almonds then served with Russian chocolate fondue).

Now, this was where I got to taste the Truffle Macarons I was raving about at the start of this blog post. I also got to taste the Chocolate Barks and the Chocolate-dipped Potato Chips. The Chocolate Barks are another awesome sweet treat to rave about. They come in Dark Chocolate, Milk Chocolate and White Chocolate variations, and each huge Chocolate Bark is studded with marshmallows and Graham cracker bits. I asked for Dark Chocolate Bark and was given a huge slice of it.

Also on the dessert buffet were Chocolate Tablea Mousse with edible flower accents, Brookies and White Russian Fondue.

HAPPY CREAM PUFF

So you think Cream Puffs are all the same? Think again. Or better yet, look at the Cream Puffs at Happy Cream Puff before you even think of making such a declaration. At Happy Cream Puff, Cream Puffs come in a variety of flavors. It offers the Nama Choux Series, which include Strawberry Nama Choux (with fresh whipped cream between layers of fresh strawberry and new baked puffs) and Banana Nama Éclair; the Puff Series, which includes the extremely popular Caramel Cream Puff; and Petit Puffs, whose flavors include Plain, Caramel, White Chocolate and Dark Chocolate.

Incidentally, it is owned by actor-politician Alfred Vargas and his lovely wife, whom we met last Friday (February 28, 2014) during Ayala Malls’ media launch held at Crisostomo Restaurant, graced by Ayala Malls’ managements team – Ayala Land Inc. president and CEO Tony Aquino, EVP and COO Bobby Dee, VP and head of operations, Commercial Business Group, Rowena Tomeldan, and head of strategic planning Cora Dizon – after which members of media were taken on a tour of the mall.

Our tour included different stores, both new and old, retail shops and service salons.

Then we proceeded to Beauty & Butter, the Vargas couple’s facial, nail care and basic spa services business. It also carries impressive lines of nail polish (OPI, Orly, Ruby Wing and Zoya brands), face and hand care products (Iskin and Dermatopoeitin brands from the United States), and its own spa products (facial toners, lotions, soaps and heel creams) that have been dermatologist tested and approved.

Just next door to Beauty & Butter is Brow Lounge, a highly specialized eyebrow grooming and waxing salon. TALK about Dulcinea, and the first thing that comes to mind is its Churros con Chocolate. It’s THAT good. But Dulcinea proves that there’s more to it than just Churros with the eight new dishes and 15 new cakes and pastries that it recently introduced in its nine stores. Truth is that it even unveiled the new look that the chain will be adopting with the recently renovated Greenbelt 1 store of Dulcinea. This newly renovated store is the first one to display its new hip and chic look that gives it a casual restaurant and café appeal.

Coinciding with the unveiling of Dulcinea’s new look was the introduction of eight new dishes on the menu – Chicken in Almond Saffron Sauce (Php350), pan-roasted chicken breast on a bed of almond saffron sauce, topped with slivered almonds, served with sautéed asparagus and rice; Braised Duck Leg Seville Style (Php575), duck leg quarter fried and braised in olive and orange sauce, served with mashed potato; Pato con Salsa de Caparas (Php510), pan-seared duck breast topped with caper sauce, simmered for hours, and served with roasted carrots and fragrant saffron rice); Andalucian Porkchops (Php495), a 400-gram pork chop covered in Moorish spice rub, pan-seared and served with white bean stew, roasted carrots and asparagus; Lapu-Lapu con Crema de Ajo (Php420), pan-fried lapu-lapu fillet, topped with garlic cream sauce and served with roasted garlic and mashed potato on the side); Crackling Pork Belly (Php390), crackling pork belly roasted until tender and served on a bed of roasted garlic sauce, with rice on the side); Tenderloin Steak (Php595), pan-seared tenderloin topped with an olive-red wine sauce and served with roasted carrots and white bean stew; and Salmon al Ajillo (Php595), pan-seared salmon topped with garlic-and-chili oil, served with roasted artichokes and mashed potato.

Complementing these new dishes are several “redesigned” dishes. These mean old favorites on the menu that have been given a market-responsive twist. Take the Salpicao (Php350), tenderloin cubes sautéed in garlic, olive oil and spices, topped with chili. The beef now comes in bigger chunks. The Lengua (Php395), which is another Dulcinea best-seller, has also been improved beyond compare. It’s very tender ox tongue simmered in a blend of spices, sliced and generously topped with gravy and mushrooms.

On top of that, Dulcinea has been using more of the premium Jasmine rice than regular rice for its rice meals, so diners get more value for their money when dining at the restaurant.

Fifteen new cakes and pastries have also been introduced in the market, including the best-selling Dulce de Leche Cheesecake with its heavenly caramel layer on top, as well as the Malacanang Roll, which is similar to a Brazo de Mercedes but with torched wave-like meringue covering and a luscious chocolate filling instead of the usual egg custard Brazo de Mercedes is known for. It’s called Malacanang Roll because it was originally created for the former First Lady, Mrs. Imelda Romualdez Marcos, during the Marcos years. But now it is being sold and appreciated for what it is – political colors set aside because they no longer matter except that Malacanang Roll is an awesome cake creation deserving of all the accolade that it is now receiving.

Other cakes that are among the best-sellers of Dulcinea include the classic Strawberry Shortcake, the chocolate-y variation Strawberry Oreo Cake, Honey Crunch Cake (which combines texture, crunch and flavor), Dulce de Leche Cake and Tres Leches Cake. The new Dulce de Leche Cheesecake was just introduced in the market last February.

It’s also good to know that with Dulcinea’s new store ambiance and look also comes the equipment needed for in-store baking of fresh batches of pastries so diners get them fresh all the time. Right now, in-store baking is only being done at Dulcinea’s newly renovated Greenbelt 1 store, but once the other stores are renovated to adapt this new casual dining look, equipment for in-store baking will also be put in place to make freshness a standard in all Dulcinea stores.

Exciting times ahead for a beautiful dining tradition, Dulcinea, which is now celebrating its 50th anniversary. It has certainly come a long way since its founder, Senor Santos Ruano, decided to leave his grandparents’ pasteleria in Spain, travel to the Philippines and open his own humble little pasteleria along Mabini Street in Ermita, Manila, back in 1963. Through the years, over three generations of Filipinos have walked through Dulcinea’s doors and enjoyed its delicious food and pastries.

Chinese Tea Eggs

IMG_2989 copyI FIRST encountered Chinese tea eggs several years ago, when I was in Singapore to cover the activities of the Singapore Food Festival upon the invitation of the Singapore Tourism Board (STB-Philippines), which was then under Rocson Chang. One of the events highlighted during the week I was there was a food fair held in the atrium of one of the malls in Singapore. If I remember right, it was in Bugis Junction. Food booths were set up side by side, displaying different types of Singaporean food treats, and Chinese tea eggs were one of the things that caught my undivided attention. I knew it was Chinese tea eggs only because there was a sign that said so, but it was the first time that I saw them. What fascinated me about them was that when one of the shoppers peeled off the egg shell, the hard-boiled egg displayed dark veins all over the egg white.

Curiosity pushed me to buy one and try it. It tasted like hard-boiled egg, alright, but it had an added flavor dimension to it because of the Chinese tea in which the egg was soaked. Once I got back to Manila (the schedule of the entire four days in Singapore was packed with activity), I researched on Chinese tea eggs and found out how those dark tea-colored veins on the hard-boiled egg were made. But I never really got down to making them until recently.

Here’s the result of my little kitchen experiment on Chinese tea eggs…

6 eggs
enough water to cover eggs entirely
3 tbsps. Pu-erh tea leaves
5 tbsps. soy sauce
1 pc. star anise
½ tsp. five-spice powder
2-3 pcs. cloves
1 pc. small cinnamon stick
3/4 to 1 tsp. sugar

1. Place eggs in a sauce pot and fill with water to submerge the eggs completely. Boil over high heat for 8 to 10 minutes to make sure the eggs are hard-boiled.
2. Remove from the water and rinse hard-boiled eggs in tap water.
3. Crack the egg gently with the back of a spoon to create veins on the egg shell.
4. Put the cracked eggs back to the water in the sauce pot. Add Pu-erh tea leaves, soy sauce, star anise, five-spice powder, cloves, cinnamon stick and sugar. Bring to a boil, then adjust heat to low and simmer for about 2 hours. Add more water if necessary.
5. Leave tea eggs in its tea soak overnight not just to enhance the flavor in the eggs but also to heighten the color of the veins.
6. Peel and enjoy.

The idea to create Manille Liqueur de Calamansi came about as an offshoot of a conversation that Destileria Limtuaco president and CEO Olivia Limpe-Aw and food and lifestyle personality Stephanie Zubiri had about why there weren’t any prominent Philippine liqueurs that could be taken with meals. Zubiri, who was then running her own restaurant, Atelier 317, asked if Destileria Limtuaco could develop something like a limoncello but using calamansi which she could serve diners at her restaurant. Limpe-Aw took the challenge and hooked up with the Department of Agriculture (DA) under the leadership of Secretary Proceso Alcala. She met Undersecretary for special concerns Berna Romulo-Puyat during the opening ceremonies of a trade show at the World Trade Center and approached the undersecretary to talk about the new limoncello-like product Destileria Limtuaco was formulating. Limpe-Aw happened to mention not knowing where to get the calamansi rinds for this.

Undersecretary Romulo-Puyat then immediately called Department of Agriculture-Agribusiness Marketing Assistance Service (DA-AMAS) Director Dax Gazmin to discuss this supply challenge and he ended up linking Destileria Limtuaco with the Mindoro calamansi farmers and the Tugdaan Mangyan Center for Learning and Development (TMCLD).

The TMCLD, incidentally, is a group of Mangyan tribesmen from Oriental Mindoro involved in the production and processing of calamansi, and one of their main products happened to be a calamansi concentrate made through a hand-pressing process that did not damage the calamansi rinds. For its use in the production of Manille Liqueur Calamansi, Destileria Limtuaco purchases these rinds at a price equivalent to the price of the whole fruit, so the Mangyans double their income in effect and their proceeds are used to finance their Mangyan Center for Learning and Development, whose main objective is to educate the children of over 20 tribes in Mindoro and to preserve the Mangyan culture and language.

With the calamansi rinds, Destileria Limtuaco was able to finalize the formulation of Manille Liqueur de Calamansi and so Limpe-Aw got back to Zubiri and presented her with a prototype product that utilized calamansi rinds in an alcohol base.

“It came out to be exactly what I was looking for, a digestif that perfectly captured the zesty freshness of calamansi,” says Zubiri, who now serves as the product’s brand ambassador.

As for the marketing of the product, Manille Liqueur de Calamansi, again it was a collaboration between Limpe-Aw and Zubiri. Manille Liqueur de Calamansi is packaged in a retro design bottle with a French country style label with Filipino design elements, and comes in gift bags made of cheesecloth as well as in tin cans, both of which have been designed to be consistent with the brand’s identity.

Now that Manille Liqueur de Calamansi is out in the market, Undersecretary Berna Romulo-Puyat is all set to promote this proudly Philippine made product in international food shows scheduled this year. These include the International Green Week Berlin, which is the world’s biggest fair for food, agriculture and horticulture, as well as the Natural Expo West in Anaheim, California, the Salone Del Gusto in Turin, Italy, and the BIMP-EAGA Consumer Sale in Davao. The Department of Agriculture is also including Manille Liqueur de Calamansi in its roster of showcased products in four fairs in neighboring Asian countries, 14 local fairs and five other international fairs to be held in the Philippines.
