For buffet setups, serving tools such as chafers, buffet plates, grazing boards and service sets are easily within reach. The merchandise is so wide and versatile that shoppers can also find fondue sets for cheese or chocolate fondue, paelleras, cazuelas and, yes, even ingredients for a Spanish spread.

Even baking ingredients are available in the store—Wilton fondant and food coloring, chocolates for pralines and truffles, colored dusting powder for sugar crafts, cookie and cupcake decorating. Local gourmet chocolates—Auro, Malagos, Manila Chocolatier, and Theo and Philo are well represented.

Christmas Sugar Cookies

The Maya Kitchen’s Christmas Sugar Cookies

EXTEND the holidays just a wee bit more in your kitchen when you bake The Maya Kitchen’s Christmas Sugar Cookies. You can make some more to give away to family and friends. But if you’re a little uncomfortable making Christmas cookies after Christmas, you can actually change the shapes and icing designs of these sugar cookies and make them timeless. Or be early for Valentine’s and star making heart, Cupid and flower-themed sugar cookies. Use cookie cutters to do so, or make your own designs, create their cardboard patterns and use to cut your cookie dough before baking them.

For the cookies:

2-1/2 to 2-3/4 cups Maya All-Purpose Flour
2 tsps. baking powder
1 tsp. salt
1 cup unsalted butter, softened
1-1/2 cups confectioners’ sugar
1 egg
1 tsp. clear vanilla extract

1. Preheat oven to 350˚F or 177˚C. Line two baking sheets with baking paper. Set aside.
2. Sift together flour, baking powder and salt into a bowl. Set aside.
3. Cream together softened butter and confectioners’ sugar. Beat in egg and add desired flavoring. Add the dry ingredients and mix until a dough forms.
4. Roll out dough on a floured surface and use cutters to create preferred shapes.
5. Bake for 10 to 15 minutes in preheated oven or until edges as slightly brown.
6. Let cookies cool down to room temperature before decorating with icing.

For the Royal icing:
2 egg whites
2 Tbsps. lemon juice
3-4 cups confectioners’ sugar
2-3 Tbsps. fresh milk
gel food coloring in preferred colors

1. Whisk egg whites and lemon juice using a mixer until soft peaks form.
2. Add confectioners’ sugar gradually and add 1 Tbsp. of milk at a time.
3. Mix until fluffy.
4. Divide into several bowls, mix in gel food coloring.
5. Decorate cooked cookies. Let icing set for a few hours to harden.

Make 20 to 24 cookies.

Chocolate Fudge Orange Cupcakes

GOT extra all-purpose flour at home? Go creative and whip up some delightful Chocolate Fudge Orange Cupcakes? The Maya Kitchen shares this recipe of a hard-to-resist sweet giveaway using Maya All-Purpose Flour. Putting a refreshing fruity twist to your classic chocolate treat, these cupcakes are perfect not just for giving away to family and friends but also to serve and enjoy at home.

105 grams Maya All-Purpose Flour
210 grams brown sugar
1 tsp. baking powder
1 tsp. baking soda
pinch of salt
1 egg
110 grams mayonnaise
1 cup boiling coffee
90 grams quick-melt cacao, melted

1. Sift together flour, sugar, baking powder, baking soda and salt in a bowl. Make a hole in the center of the mound.
2. Add the egg, mayonnaise and boiling coffee in the center.
3. Fold in melted chocolate.
4. Line cupcake mold with paper cups.
5. Pour equal amounts of the mixture into 15 cupcake holes lined with paper cups.
6. Bake in a preheated 180˚F oven for 10 to 12 minutes.

For the chocolate ganache:
100 grams cream
75 grams unsweetened dark chocolate, cut into small pieces
125 grams dark semi-sweet chocolate, cut into small pieces
candied orange zest

1. Boil cream in a pot. Fold in chocolate pieces. Mix until smooth.
2. Scoop icing into a piping bag fitted with desired tip. Use to decorate each cupcake with a big rosette of fudge and garnish with candied orange zest.

Baked Baby Back Ribs with Coleslaw

THIS is definitely the high-tech age, where gadgets make different routine tasks so much easier to complete. Even cooking is a cinch with such “intelligent” kitchen appliances as Samsung’s Smart Oven. Designed as an all-in-one kitchen partner, the Smart Oven works as a convection oven and, at the same time, a microwave oven that can also be used for baking, grilling, slim frying, defrosting, steaming and, yes, even yogurt making.

The Smart Oven is so ‘smart’ that, should you decide to use it to prepare your holiday recipes, the daunting task can actually be, well, easy. So, how about making Baked Baby Back Ribs with Coleslaw for your Media Noche on New Year’s Eve?

1 kg. baby back ribs, cut into 3-rib portions
1 sachet Maggi Magic Sarap (8 grams)
1/4 tsp. freshly ground pepper
2 cloves garlic, minced
1 pc. small onion, minced
1 pc. small red chili, sliced
1 cup water
2 Tbsps. soy sauce
2 Tbsps. tomato catsup
2 Tbsps. brown sugar
1 Tbsp. peanut butter
1 Tbsp. chopped parsley

For the slaw:
1 cup shredded cabbage
1 cup shredded red cabbage
1/2 cup shredded carrot
1/2 tsp. fine salt
1/8 tsp. freshly ground pepper
1/4 cup Nestle All-Purpose Cream
2 Tbsps. mayonnaise
1 Tbsp. lemon juice

1. Season ribs with Maggi Magic Sarap and pepper. Place, meat side down, on a deep baking pan.
2. Mix garlic, onion, chili, water, soy sauce, tomato catsup, sugar, and peanut butter. Pour into pan and mix well with pork.
3. Bake on high rack using Microwave + Grill Mode. Set aside.
4. For both MC32K and MC35J: Select Microwave + Grill. Set at 600W for 60 minutes. After 45 minutes, flip and continue to cook for the remaining 15 minutes.
5. Prepare slaw by mixing together cabbage, carrot, salt, pepper, Nestle All-Purpose Cream, mayonnaise and lemon juice. Mix well and refrigerate.
6. Brush pork with the reduced sauce, transfer onto a serving plate and garnish with parsley. Serve with cabbage slaw.

Makes 4 servings.
