DIAMOND Hotel Philippines’ main dining facility, Corniche, features regional food promotions every now and then. But this week, August 1 to 10, 2014, it deviates a bit by featuring Australian cuisine in a special food promotion called Flavors of the Land Down Under.
It’s a celebration of Australian culture integrated into modern food artistry with the culinary creations of guest Australian chef Steve Shrimski. A seasoned taste master, Chef Steve is owner and executive chef of Canvas Bistro Bar Gallery at the Terraces Ayala Center Cebu and is part owner and chef of Circa 1900 in Sanjercavil Road, Lahug, Cebu City. Residing in Cebu City since March of 2009, Chef Steve was involved in the opening of Kamias, a modern Filipino restaurant in Legazpi City (Casablanca Suites, 2012), served as pre-opening consulting chef for Best Western Lex, Escario (Cebu City, 2012 to 2013), did the menu change for Alegre Beach Resort Sogod (Cebu City, 2013) and conceptualized the restaurant menu and pre-opening rites of Well Hotel Ramos.

More than just oysters, squid, sausages, barramundi fish, duck and lamb, Chef Steve also caters to the adventurous spirit in diners with the exotic flavors of Australian cuisine, such as wild goose, kangaroo, crocodile, venison and ostrich. So, how would you like to indulge on Kangaroo Carpaccio with Munthari Dressing, Wild Goose and Pepperberry Tarts, Crispy Crocodile Swag Bags, Roo Ragu with Fusilli Pasta, Grilled Ostrich with Balsamic Honey Jus, Venison Loin with Cheesefruit Risotto and Native Thyme Jus, and Roast Leg of Lamb Fillet with Native Thyme, Mint and Garlic?
Non-adventurous diners will also enjoy Flavors of the Land Down Under, as it also features more subtle flavors, such as Oysters with Warrigal Greens and Macadamia Nut Pesto, Aussie Sausage Rolls, Spiced Squid Salad with Cucumber and Capers, Lemon Myrtle and Beer Battered Fish Fillets, and Pepperberry Encrusted Aussie Beef Medallions.
