Herbed Butter Crostini with King Cup Sardines Pâté

SARDINES is a Filipino breakfast staple. We eat it straight from the can or cooked into ginisang sardinas with garlic rice and fried egg. It is a delicious and filling meal that gives us energy to meet the day’s challenges in school or at work—and rightly so because it is full of nutrients such as Iron, Calcium, B vitamins and heart-healthy Omega-3 fatty acids.

As we discover all the good sardines can do for our health, we also begin discovering new ways of serving and enjoying it. Chefs have even elevated it to gourmet status by using it in pasta, sandwiches and appetizers, among others. Just recently, Luxent Hotel’s Executive Chef Kim Dalisay picked up a few cans of King Cup Sardines in Tomato Sauce and King Cup Sardines in Tomato Sauce with Chili, and one of the dishes that Chef Kim whipped up was Herbed Butter Crostini with King Cup Sardines Pâté.

Surprisingly inexpensive and simple to make, Herbed Butter Crostini with King Cup Sardines Pâté uses King Cup Sardines instead of liver. It’s great on toasts and salads, too.

1.5 grams butter
1 can King Cup Sardines, drained
1 gram chopped parsley
1 tsp. fresh thyme
3 grams minced garlic
.05 gram grated lemon zest
French bread, sliced
7 grams butter
black olives, sliced
chopped spring onion
shredded lettuce

1. Pre-heat oven to 425 °F.
2. Melt 1.5 grams butter in a heavy skillet over medium heat.
3. Add sardines and stir until fish dissolves around 3 minutes.
4. Stir in herbs, garlic and lemon zest.
5. Arrange the bread slices on a baking sheet. Brush top of bread slices with butter. Bake until bread slices are golden and crunchy, around 7 to 10 minutes.
6. Spread sardines pâté on bread slices. Top with sliced black olives, chopped spring onion and lettuce.

Sicilian King Cup Pizza

HERE’S another delightful dish that you can whip up using a can or two of King Cup Sardines, as shared by Luxent Hotel’s executive chef Kim Dalisay, who created this recipe. Teeming with cheese and herbs and also perfect on toast, this pizza is a healthier homemade alternative to commercial pizzas. It can be paired with a simple salad for a truly satisfying meal.

2 cans King Cup Sardines in Tomato Sauce
500 grams pizza crust
200 ml. tomato sauce
350 grams Mozzarella cheese
120 grams Parmesan cheese
20 grams dried oregano
200 grams onion rings

1. Top the pizza crust with tomato sauce (*make sure to leave about an inch of bare dough around the edges of the crust), Mozzarella cheese, Parmesan cheese, dried oregano, onion rings and sardines.
2. Bake until the cheese and crust begin to brown, about 20 minutes.
3. Let cool for 5 minutes.
4. Slice into square and serve.

Pasta Aglio Olio
with Sauteed King Cup Sardines

PrintWHAT else can you do with a can of King Cup Sardines besides eat it straight from the can or make ginisang sardinas with it? Why, you can turn it into a gourmet one-dish meal by making Pasta Aglio Olio with Sautéed King Cup Sardines!

Executive Chef Kim Dalisay of Luxent Hotel shares this filling and comforting pasta dish that packs in a ton of flavors without any calorie-laden ingredients. It is also quick and easy to prepare.

4 kgs. angel hair pasta
500 ml. pure olive oil
500 grams minced garlic
2 cans King Cup Sardines with Chili, drained
salt to taste
4 grams ground pepper
10 grams garlic powder
sprinkle of chili flakes
250 grams chopped parsley
250 grams Parmesan cheese

1. Boil water with salt in a pot. Add angel hair pasta and boil for 10 minutes or until al dente.
2. In a pan, add pure olive oil, then sauté garlic and King Cup Sardines over medium heat.
3. Add the pasta and toss well, then sprinkle with salt, ground pepper, garlic powder and chili flakes.
4. Garnish with parsley and serve with Parmesan cheese.

Just one of the many brands under Permex Producer and Exporter Corporation and backed by 30 years of experience, King Cup is produced in Zamboanga, which is reputed to be one of the biggest and most efficient tuna and sardine processing plants in the country. Permex employs about 1,500 workers and has a capacity to process 70 metric tons of tuna and  metric tons of sardines. It has certainly come a long way from its humble beginnings, with a work force of 300 and a capacity of 10 tons of fish. It has grown and expanded tremendously over the last three decades.

Aside from these, the company has won several awards and earned accolades over the years. It takes pride in being the only Philippine fish cannery to attain a “Double Triple A” rating by the Department of Fisheries and Oceans of Canada. It was also a recipient of the Golden Shell Award for Excellence in Exports, the first fish cannery to earn the recognition. Permex also happens to be one of the few Philippine canning plants accredited by the European Union.

The second most celebrated event next to Chinese New Year, the Mid-Autumn Festival takes place when the moon is in its fullest state, symbolizing harmony and prosperity.
